Paleo Dessert – Cherry, Coconut, Banana Smoothie

When searching for Paleo recipes on Pinterest, it is becoming increasingly hard to avoid all of the dessert recipes. I’m not one that normally (or ever) craves sweets, but occasionally I miss eating ice cream. This pin in particular caught my eye a few weeks ago:

That recipe is easy, with very few ingredients and tastes delicious! When I had a cold last week soup just wasn’t cutting it for me, so I whipped up (literally) one of these for lunch. I’ve never been one that enjoyed (or thought I liked) coconut, so I was a little wary of using so much coconut milk in this recipe, but you can barely taste it! I highly recommend trying this dessert.

While I was out at a happy hour last night, my girl friend Alessandra mentioned that she had discovered a new product, tart cherry puree, at Whole Foods that she was using to make smoothies every morning. Turns out the Organic Tart Cherry Puree she was talking about is a brand new product made by Cheribundi, which is where Jonathon works. The product is so new, we didn’t know it was in stores yet, so we immediately went out to buy some for ourselves.

Tonight for dessert we created our own smoothie recipe, and it was delicious!


Paleo Dessert - Cherry, Coconut, and Banana Smoothie

Ingredients
  • 1 Banana
  • ½ cup Coconut Milk
  • 1 Cheribundi Organic Tart Cherry Puree
Instructions
  1. Add all ingredients to a blender.
  2. Blend until smooth.
  3. Enjoy!
I was amazed at how cherry flavored this smoothie was! You could barely taste the bananas and coconut milk. It was like a cherry pie! Best part about these Cheribundi Cherry Smoothie packs? The *ONLY* ingredient is cherries. That is it!
