Cheesy Spinach and Bacon Dip

It has been years since I have gone skiing, or even just visited the mountains in the winter! However I recently took a little weekend vacation up in Vail with friends to hang out by the fire, read some books, knit some leg warmers and, of course, cook, eat and drink! Some of my best memories from college were the weekends we would drive up to Vail on Thursday night (no one went to school on Friday, sorry mom) and ski the weekend away. Ok, so while I usually would just ski one ½ day, I still love the experience of being up there!

After some après ski at the bars, we would go back to the cabin to hang out before hitting the town. Generally we were in a snacking mood, but instead of spending hours creating meals and snacks we would make our favorite: VELVEETA® Ro*Tel® Queso dip. This dip was always a hit with everyone, even the pickiest of eaters would indulge. When I read the recipe below for spinach and queso dip, I knew I had to make it! The recipe is SO easy and tastes delicious!

Cheesy Spinach and Queso Dip

Ingredients:
1 package of frozen chopped spinach, thawed and drained
1 pound VELVEETA® cut into 1/2-inch cubes
4 ounces of cubed Cream Cheese
1 can of RO*TEL® Diced Tomatoes & Green Chilies, undrained
8 slices of Bacon, cooked and crumbled

Directions:

Microwave all ingredients in microwaveable bowl on HIGH for 3 minutes. Stir and microwave for an additional 2 minutes, or until VELVEETA® is completely melted and mixture is well blended. This is the perfect dip to serve after a day on the mountains, or while hosting friends during a football game!
